Paolo Manfredini Bee farm was born to pursue grandfather’s activity started for passion in 1925. This passion, in conjunction with financial straits of that time, encouraged research and study aimed at rationalizing the process of honey production. In the 60’s the current owner, after he had worked with a professional beekeeper for 7 years, started today’s activity with his father’s bees. After the marriage, his wife became part of the farm’s team and the activity started growing quickly and beehives started to be often moved in search of seasonal flowers. In the 70’s the bee farm moved from Sassuolo to Castelvetro, where a store-workshop was created and bees were displaced in precise areas of Italy. The majority of beehives are settled down in the Maremma region (in particular among Viterbo, Grosseto and Terni) to achieve exclusive qualitative standards: Maremma is recognized all over the world for environmental protection. Because of this choice a specific workshop for honey extraction was realized in Capodimonte (VT). In 1991 the owner’s son started working full-time at the farm and this enabled the highest development of the activity, which today works with 1200 bee families. This entails a considerable amount of work, since the farm deals with everything that concerns beekeeping. All the materials used during the production are made in the laboratory and only when the time is ripe the honey is removed from the hive and placed in the laboratory of Capodimonte (VT) for immediate honey extraction. Here, with the help of an "uncapping", it is released from the comb so that the subsequent machines (honey extractors) can pull it out by centrifugal force. The use of a "press for opercula" separates the remaining honey from the wax. The finished product is placed in ripening and drums for the natural decantation. The honey obtained keeps the same characteristics of the hive because it doesn’t undergo any treatment or alteration. The lack of synthetic substances and the location of the hives in an unspoiled environment ensure products free of any pollutant. Today's activity is followed with professionalism mostly by the son Luca and his wife, moved permanently to Capodimonte (VT).
